
Sooo, about about 1 month ago I decided to go gluten free. My reason being that I have Hashimoto's Thyroiditis, an auto-immune mediated hypothyroidism, which (in addition to a low thyroid) causes me to have achy joints (among other things). The holistic theory is that the structure of a gluten molecule is very similar to a thyroid molecule. So, the thought is that the body mistakes gluten molecules for thyroid molecules, thus causing what is called a flare up, which in turn causes my achy joints. After about a month of gluten-free food (and 12,000 units of Vitamin D a day) I feel much better.
BUT-I am going to take this time to whine...I really miss wheat products: all bread... breadsticks...pizza...muffins...cookies...cake...Doritos...sandwiches...beer (yep-beer is basically wheat)...bagels...hamburger/hotdog buns...breakfast foods (waffles, french toast, pancakes, normal store-bought cereal)...flour cheese quesadillas from Gorditas...texas toast....really I could go on and on.
Okay, now the upside (I have to find something positive in it, right?) #1: I feel about 65% better. #2: I've lost a bit of weight. #3: I have had to get more creative and open about trying new foods-which is what led me to write this post.
A few of my new favs are: baked potatoes with the works, almonds (especially if covered with chocolate), quinoa pasta, ribs, deli meats...(I have a new found love of red meat), tacos (just because it's about the only fast food item I can eat-I am soo sick of them at the moment though), popcorn, and celery/peanut butter sticks.
So, there's my rant of the day! Awww man....now I'm craving that lemon cake my mom sent home with us last night :(

You are amazing. We have thought about trying it for Phil since gluten always makes him sick...but it's so so so hard. You are my inspiration!! It can be done!

so proud of you! i can only imagine how difficult it has been, but i am happy you see the upside of it all!
keep up the good work. we will always be able to figure out something to eat on our lunch dates...even if it's just apple and cheese slices :)
